R1 3-disc "Deluxe CE" has the best set of extra features and Italian 5.1 track (along with original mono).
The R2 Italian release (see the DVDBeaver comparison) offers a slightly better OAR transfer and has removable English subtitles and additional extra features (some of them are only in Italian).
R0 Australian 2-disc CE has some nice extra features as well.
Also note that the French R2 and the R0 Brazilian "Versatil" release include some unique extras not on any other version, however they do not have English subtitles and the Brazilian image is cropped.
The choice is yours!
