The US Disney and GKids/Shout! Factory releases include the "The Art of Spirited Away" featurette though note the introduction missing from the GKids/Shout! Factory release.
The US GKids/Shout! Factory Collector's Edition includes a CD and book, but note it is missing the DVD with the NTV documentary.
The UK and Australian releases have the exclusive "Meet Hayao Miyazaki" featurette.
The Scandinavian release has an exclusive commentary (in Finnish).
The German release has some exclusive German extras.
The Japanese release has the exclusive Japanese voice recording script feature.
For collections, the Australian collection has the most extras.
Note the "Meet Hayao Miyazaki" featurette on the UK and Australian releases may be an easter egg on the US editions but this is unconfirmed (as it was an easter egg on the DVD edition).
