The stereo music-only track on the Italian cut is a reconstruction of the soundtrack using the album tracks, not the Italian cut's music stem (which would have been mixed down to mono).
The DVD-ROM .pdf version of the "Cuting to the Chase" essay contains additional bullet points rundown of the differences between the US and Italian versions.

OVERALL: Draw
All releases contain exclusive contextual material, and the French, UK and US discs include both the US theatrical cut and the longer Italian version. (However, please note that the longer cut is not English-friendly on the French release.)
The German and UK discs contain unique extra features and, unlike the US disc, provide the option of viewing the longer Italian domestic version with the English dub (with about 20 minutes of the film presented in Italian with English subtitles, in scenes were an English dub was never created) but is missing a 3 second shot of Tomas Milian from the climax owing to print damage. (At the moment, it is unclear whether or not the US disc contains this 3 second shot.)

- expanded US cut (94:56) - the theatrical cut ran roughly ninety minutes while the expanded version adds three more scenes with English dubbing involving a group of monks that Sanchez and Corbett both come across (the Columbia Pictures editing memo specifies that these bits could be left in for television, presumably to compensate for TV censorship cuts).
- longer Italian domestic version (110:18) - Blu-ray B France- Wild Side Video - No cuts - Contains both US theatrical cut (89:26) and longer Italian domestic version (110:25) - both contain the 0:03 shot of Milian at the climax
- Blu-ray B Germany- Explosive Media - No cuts - longer Italian domestic version (109:59) - a 3s shot of Milian has been removed from the climax (owing to print damage)
- Blu-ray B Limited Edition United Kingdom- Powerhouse Films - No cuts - Comes with the Italian theatrical version (110:19), the extended US theatrical version (94:56) and the US theatrical version (89:21)
